Whipped feta + strawberry wreath with basil + cherry toms
The plating of this wreath makes it the ultimate Christmas starter or side - but it’s equally good throughout the year. It’s a little bit sweet and a little bit savoury, with umami tomatoes, sweet strawberries, salty feta and tangy balsamic creating a simple flavour bomb dish.
Top Tip - try to use the freshest ingredients possible to make this dish sing - particularly the strawberries & basil.

Ingredients
Macerated strawberries
250g fresh strawberries, hulled and cut into sixths lengthways
200g cherry tomatoes, halved
1 medium handful basil leaves, shredded, plus extra to serve
2 tbsp balsamic vinegar
1 tbsp brown sugar
1 tsp sumac
Whipped feta
200g feta, finely crumbled
200g Greek yoghurt
2 tsp sumac
Method
For the strawberries, place the ingredients in a medium bowl and toss to coat. Set aside for 15 minutes to allow the flavours to mingle.
For the whipped feta, in a small bowl, mash the feta with a fork to form a smooth-ish paste. Stir through the yoghurt and sumac and whisk with a fork until whipped.
To serve, spoon the whipped feta onto a large platter in a ring shape (or onto smaller plates for individual servings). Smooth out with the back of a spoon. Spoon the macerated strawberries and tomatoes onto the feta ring, drizzling with the macerating liquid, to create a wreath. To finish, arrange small whole basil leaves around the wreath, nestled into the strawberries in a leaf-like fashion. Serve as a side or as a starter with your favourite bread.
